Solaz, a Luxury Collection Resort in Los Cabos, is excited to announce the appointment of Alejandro Cortes Rebolledo as its new Director of Restaurants & Bars. With more than ten years of experience in the hospitality industry, Alejandro is set to enhance the resort’s renowned dining program and elevate Solaz’s position as a destination for world-class culinary experiences.
“I am honored to join the fantastic food & beverage team at Solaz and bring my passion for innovative, high-end gastronomy to this exceptional property,” said Alejandro Cortes Rebolledo, Director of Restaurants & Bars at Solaz. “My goal is to craft immersive dining experiences that celebrate the rich flavors and culture of the Baja region while delivering unparalleled hospitality to our guests.”
In his new role, Alejandro will oversee all aspects of the resort’s food and beverage operations, ensuring that each dining venue delivers a unique and unforgettable experience. His responsibilities include refining menus, improving service standards, and creating immersive gastronomic experiences that embody Solaz’s dedication to luxury and authenticity.

Before joining Solaz, Alejandro held leadership roles at several esteemed hospitality brands. He was Food & Beverage Supervisor at The Westin Playa Bonita in Panama before advancing to The Cape, a Thompson Hotel in Los Cabos, where he rose from Restaurant & Bar Manager to Food & Beverage Manager.
